KS Super Pequin is Khang Starr's larger bird pepper, grown in North Texas. Ripe pods look like tiny Scotch bonnets, drop at a touch, and carry more fruit flavor than a wild pequin.

Flavor & Use

Citrus-lime and tropical sweetness up front. Heat comes on late, then fills the mouth and throat. Overripe red pods go soft and pick up a little bitterness.

Culinary

Eat them fresh just as they change color. Use fully red pods in sauce or powder.

About

Pods start green, pass through orange, and finish bright red. Shape runs from mini Scotch bonnet to a short habanero bullet, about two to four centimeters long, with thicker walls and only a few seeds. Green or just-turning fruit is crunchy and citrus-lime. Fully red fruit turns soft and is better cooked. Heat is hot, not superhot, and builds slowly. Plants take full sun. Ripe pods drop at a touch.

Backstory

Khang Starr wanted a pequin that was easier to pick and better raw. He made the cross in Texas and first showed the named line in 2018. Seed is scarce because each pod holds only a handful of seeds, so the variety mostly moves through the Pepper Lovers group rather than shop packets.
