The Trinidad Perfume pepper is a unique seasoning chili from Trinidad that closely resembles a habanero in appearance and aroma but carries almost none of the heat. Pods measure 1 to 1.5 inches long and about 1.25 inches wide, starting green and maturing to a vibrant bright yellow or yellow-orange with a lantern-like shape and often a small tail or stinger. The flavor is distinctly citrusy and tropical, featuring hints of pineapple, papaya, and melon along with subtle smoky undertones and a signature perfume-like scent that gives the variety its name. Heat levels range from 0 to 500 Scoville heat units, placing it among the mildest edible peppers—often imperceptible to the palate and far milder than a jalapeño. This makes it ideal for adding bold Caribbean flavor to dishes without any burn. Plants are compact and bushy, reaching about 42 inches tall with light green foliage, and they are prolific producers. The peppers can be used fresh in salsas, sauces, grilling, roasting, or pickling, or dried into a flavorful powder for seasoning. It serves as an excellent mild alternative to hotter habanero varieties while retaining their signature fruity profile.
