Serrano Tampiqueño is the old Mexican trade name for a slender, green-to-red serrano from the Puebla and Hidalgo highlands. Cooks use it raw in salsa and pico de gallo.

About
Plants reach about 60 to 90 cm and load up with club-shaped pods 4 to 8 cm long and about 1 cm wide. The skin is smooth and glossy, thin enough to chop raw without peeling. Green fruit tastes bright and grassy. Left on the plant it turns red and sweetens a little. Kitchen use is fresh salsa, pickled rajas, and soups. Heat sits in the medium band and varies pod to pod.
Backstory
Serrano means from the mountains. Mexican cookbooks list tampiqueño as the Puebla-sierra name for this everyday green chile, not a separate hybrid. USDA filed the cultivar as PI 640636, Serrano Tampiqueno, collected in Mexico. INIFAP later sold a commercial open-pollinated line called Tampiqueño 74 as the standard market serrano.
