About
Pods are long New Mexican chiles with rounded shoulders, a pointed tip, and smooth skin. Unripe fruit is green and finishes brown, about 10 to 15 cm long and 5 cm across at the shoulder. Flavor is the usual New Mexican chile taste, mild and a little fruity when ripe. Roast, grill, or dry the pods. Plants stand about 60 to 100 cm with dense leaves that shade the fruit.
Backstory
NMSU released NuMex Eclipse in 1988 alongside NuMex Sunrise and NuMex Sunset. Paul Bosland, Jaime Iglesias, and Steve Tanksley bred the trio so New Mexican pods could finish yellow, orange, or brown instead of only red, which let growers string full-size colored ristras.
