KS Texas Crimson Bonnet is a large, long-stemmed chinense from Khang Starr's North Texas garden. Ripe fruit turns a bright crimson and keeps Scotch Bonnet flavor with extra heat.

Flavor & Use

Ripe red pods smell a little sweeter than the chocolate sister. Taste is Scotch Bonnet fruit first, then a sharp mouth and chest burn with little sweetness on the swallow.

About

Ripe pods are above-average bonnets with thin walls, a wide placenta, and stems two to three inches long. Skin is wrinkled. Many fruits keep the classic squashed cap. Some run long with a tip while the line is still being selected. Flavor tracks a Scotch Bonnet, tropical and familiar, with a superhot burn that hits fast and almost no floral note. Give the plant room. It can stand a little under five feet and sets a heavy crop in a warm season, then slows when days sit above about 95 F.

Backstory

Khang Starr bred this line in 2016 on his Fannin County farm and passed seed through the Pepper Lovers community. He keeps selecting for heat, bonnet shape, color, and flavor. Chocolate and yellow pods still show up beside the red ones.
