Kalocsa Paprika, also known as Paprika Kalocsa, is an open-pollinated Hungarian heirloom pepper variety specifically bred for spice production in the historic paprika-growing region of Kalocsa. The plants reach 24-36 inches tall and produce abundant yields of tapered, conical pods measuring approximately 6 to 6.5 inches long by 1 to 1.25 inches wide with medium-thin walls. Fruits start green, transition through brown, and mature to a vibrant dark red. The flavor is distinctly rich paprika with sweet, fruity, and nutty undertones, offering mild warmth rather than intense heat. This cultivar is prized for its bright color and aromatic qualities, which are enhanced by the region's sunny climate and fertile soils along the Danube. It is closely related to but distinct from Szegedi varieties, being thicker-walled and slightly longer. Kalocsa Paprika is primarily grown for drying and grinding into the iconic Hungarian paprika powder used in traditional dishes, though the fresh pods are also excellent for stuffing, roasting, or adding to sauces. The variety traces its roots to 19th-century breeding efforts in Kalocsa, where growers like Ferenc Horvath developed reliable sweet-to-mild lines. Kalocsa Paprika originates from the Kalocsa region of Hungary, one of two historic centers of paprika cultivation alongside Szeged. In the 19th century, local breeder Ferenc Horvath developed early non-pungent varieties that laid the foundation for consistent, high-quality sweet paprika production. The area's abundant sunshine and fertile soils produce peppers with exceptional color and aroma, leading to protected geographical indication status for Kalocsa paprika.
