Jay's Peach Ghost Scorpion, often abbreviated as JPGS, is a rare and visually striking superhot chili pepper developed by Pennsylvania grower Jay Weaver. It originated as an accidental cross between a Bhut Jolokia (ghost pepper) and a Trinidad Scorpion on Meadow View Farm in Bowers, Pennsylvania, around 2010. Jay stabilized the seeds to create this cultivar, which ripens to a brilliant peach color. The pods are gnarly and wrinkled, typically 2 to 3.5 inches long and 0.5 to 1.5 inches in diameter, frequently displaying bumpy textures and occasional scorpion-like tails. With a Scoville rating ranging from 800,000 to 1,100,000 units, it delivers an immediate and climbing burn that overwhelms the senses, yet beneath the fire lies bright fruity and slightly floral notes that make it appealing for sauces and powders. The plants grow large and bushy, reaching up to 3 feet in height, and are highly productive, though the variety can exhibit some genetic instability leading to variations in pod shape and color. This pepper is best suited for experienced growers and heat enthusiasts, excelling in fermented hot sauces, chili powders, salsas, marinades, and rubs where its unique peach hue adds visual appeal.
