About
Gator Jigsaw is a Capsicum chinense superhot whose pods ripen from green to a distinctive mustard or olive-yellow, remaining camouflaged among the foliage until they soften. The heavily wrinkled, dimpled fruit reaches 7–10 cm and carries an estimated 1–2 million SHU. Plants grow vigorously to 90–150 cm and are highly productive once established. Flavor opens with fruit and tart sweetness before a rapid, mouth-numbing burn that peaks and partially dissipates. The variety is especially valued for vivid green sauces and powders; color change is subtle, so harvest by feel as well as hue.
Backstory
Gator Jigsaw arose as a natural mustard-green mutation of the Finnish-bred Fatalii Gourmet Jigsaw (itself a Moruga Scorpion selection). The phenotype was first noticed and saved by grower James Hill in Florida in the late 2010s; Italian breeder Rocco Maltesi later stabilized the line, fixed the unique coloration and gnarled shape, and released color variants (purple, orange, chocolate). The “Gator” name references both the Florida alligator and the pepper’s reptilian, dimpled skin.
