When immature (yellow-lime/green) the flavor is remarkably similar to pepperoncini—bright, tangy and crisp with only mild heat. Fully ripe fruit develop deeper sweetness while remaining among the milder hot peppers; excellent for paprika.

About
Gabi Hot Wax is a larger, highly productive selection of the Hungarian Hot Wax type (Capsicum annuum). Yellow-lime fruits ripen through orange to dark red and are 50–80 % larger than typical Hungarian Hot Wax peppers. Extremely productive even in cool outdoor conditions and keeps well once picked. When green the flavor is remarkably similar to pepperoncini and is excellent sautéed; fully ripe fruit make a favorite mildly spicy paprika. Seed was collected by The Seed Ambassadors Project from a Hungarian commercial seed company.

Seed collected by The Seed Ambassadors Project from a Hungarian commercial seed company and introduced by Adaptive Seeds (produced by Persephone Farm, Oregon). A larger, highly productive selection of the classic Hungarian Hot Wax type, valued for reliable fruiting even in cool outdoor conditions and for making mildly spicy paprika.
