About
Dolmalik Biber is a Turkish heirloom Capsicum annuum of Ancho type. The lobed fruits average about 5 cm wide by 10 cm long, ripening from light green through reddish-brown to dark red, with medium-thick flesh. Plants reach 60–90 cm and yield heavily. Flavor is rich, smoky and sweet with mild heat that varies by growing conditions; roasting deepens the smoky-sweet character. In Turkey the peppers are classic for stuffing as dolma and are also dried and powdered for seasoning.
Backstory
An heirloom Ancho-type Capsicum annuum long grown in Turkey and selected for stuffing. The name Dolmalik Biber literally means “stuffing pepper,” reflecting its traditional role in Turkish biber dolması. Seeds matching this type have been collected from Turkish markets and conserved as USDA accessions such as PI 176463.
