About
Pods look like small three- or four-lobed bells, about two inches wide and three inches long, and weigh about an ounce. They start bright green, pass through scarlet, and finish deep red. The taste is sweet and savory, with a mild bite that is stronger on fully red fruit. Compact plants reach about two feet tall and wide and grow as well in a patio pot as in a bed. Use them raw, stuffed, or grilled.
Backstory
Gordon Smith of Grow Star L.L.C. bred Cajun Belle, and PanAmerican Seed put it into commercial seed channels. It won the 2010 All-America Selections vegetable award after national garden trials. The Cajun name is a flavor cue, not a Louisiana origin.
