Bridge to Paris

Open-pollinated Italian frying pepper developed by farm-based selection from a discontinued commercial hybrid. Long, thick-walled, sweet red fruits with very few seeds; one of the few de-hybridized frying types that comes true from saved seed.

About

Long, glossy Italian frying peppers that ripen from green to bright red. Fruits reach 7 to 9 inches with unusually thick walls for the type and very few seeds, giving a meaty bite. Flavor is distinctly sweet with a fruity note once fully colored. Plants are tall and productive; staking helps support the heavy set. Useful green or red for frying, roasting, and freezing.

Backstory

A commercial F1 hybrid called La Paris was dropped by the seed trade. Growers at the biodynamic Kimberton CSA in Pennsylvania saved and selected seed to recover an open-pollinated form. The line moved with farm interns to Phillies Bridge Farm in Gardiner, New York, where further selection increased size and added a faint edge of warmth, then was stabilized and named by the Hudson Valley Seed Library for the route from La Paris to Phillies Bridge.
