About
Plants are tall and branching with dark foliage and purple stems. They set pendant, heavily ribbed 5–10 cm pods with thin wrinkled walls, starting green, coloring purple in sun, and finishing peach, often with leftover purple mottling. Flavor is sweet and peachy with a light floral note, then a slow superhot burn. Kitchen use is fruit sauces and ferments, vinegar sauces, glazes, salsa, pickles, and dried peach-colored powder. Yields are widely described as heavy.
Backstory
Enrico Lai bred the original Blue Ghost in Italy. That first line ripened red. The blue in the name is foliage and unripe color, not the ripe fruit. Later grow-outs threw salmon-to-peach pods with purple patches, and that phenotype was kept and sold as Blue Ghost Peach.
