Blue Ghost Peach

Sweet, peach-forward, and faintly floral on first bite, then a slow-building ghost-family burn that lingers for 15–30 minutes. Cleaner and less earthy than red Bhut Jolokia, with enough fruit to carry through sauces and ferments.

Blue Ghost Peach is a Capsicum chinense selection from Enrico Lai’s Blue Ghost cross of anthocyanin-heavy Yaki Blue Fawn and peach-ripening Peach Ghost Jami. The original Blue Ghost ripened red; growers later kept plants whose pods finished peach, often with leftover purple mottling in full sun. Plants are tall and branching with dark foliage and purple stems, set pendant, heavily ribbed 5–10 cm pods with thin wrinkled walls, and are widely described as high-yielding. Heat is ghost-class but not fixed: the best-caveated published range is about 400,000–850,000 SHU, while some catalogs quote ~100,000 and others 1,000,000+. Expect plant-to-plant variation in color, shape, and burn until the line is more tightly isolated.

Enrico Lai made the original Blue Ghost in Italy by crossing Yaki Blue Fawn (dark anthocyanin foliage and purple immature pods) with Peach Ghost Jami (a peach Bhut Jolokia-type selected by Jami Hendrix). That first line ripened red; the “blue” in the name refers to foliage and unripe color, not the ripe fruit. In later grow-outs, some plants finished salmon-to-peach with purple patches. That phenotype was kept and circulated as Blue Ghost Peach; U.S. sellers such as White Hot Peppers (Justin White) describe selecting a peach strain from Lai’s red-ripening original. Seed lots are still often non-isolated and only partly stable.
