Flavor & Use
Green fruit tastes like a standard jalapeño, grassy and sharp. Red fruit is the same flavor with a little more sweetness, and growers often wait for that stage for sauce.
Culinary
About
Fruit is a chunky jalapeño shape, about 9 to 10 cm long, with thick walls and a blunt tip. Plants are upright and fairly compact, and pods often cork before they turn red. The flavor is a straight jalapeño taste, brighter and a bit sweeter once red, and the heat sits in the medium band. Growers use it for salsa, pickling, and hot sauce, green or red.
Backstory
W. Atlee Burpee and Co. introduced the hybrid in 1999 and sold it for the 2000 season with Hufnagle's photograph on the packet, a first for the company. George Ball, then Burpee's president, had seen the show Biker Billy Cooks with Fire and made him the jalapeño mascot. The parent lines were never published.
